Minestrone Soup (Sebzeli Italyan Corbasi)
1 onion, chopped2 carrots, roundly sliced1 zucchini, chopped3-4 Tbsp olive oil1 green/banana pepper, chopped2 cups tomatoes, crushed1 ½ cup beans (any kind), cooked½ cup green beans, cut into bite sizes1 cup small shaped pasta½ cup celery stalks, chopped4 cups hot water (chicken broth)1/3 cup parsley, chopped (optional)½ tsp dried basil1 Tbsp salt to tasteBlack pepper to tasteSaute onions and garlic with olive oil for about 3-4 minutes. Stir in carrots, zucchini, celery stalks, peppers and green beans. Cook for 8-10 minutes. Add hot water/chicken broth, beans, tomatoes, pasta, and basil. Add salt and pepper to taste. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Stir in parsley. Cook 5 minutes longer or until past is tender. Serve hot.
